Ingredients

  • 5 Tablespoons butter
  • 3 1/2 cups Bisquick (plus about 1/2 cup for cutting)
  • 1/2 cup full-fat sour cream
  • 1 cup Lemon Lime Soda
  • 1 cup frozen blueberries

Glaze

  • 1 cup powdered sugar
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice

Instructions

  1. Preheat and melt butter: Preheat your oven to 425°F (220°C). Place 5 tablespoons of butter in a pan or skillet and put it in the oven while it preheats to melt the butter evenly.
  2. Mix dough: In a mixing bowl, combine 3 1/2 cups Bisquick, 1 cup lemon lime soda, and 1/2 cup full-fat sour cream. Mix until the dough is just combined and slightly sticky.
  3. Fold in blueberries: Gently fold 1 cup of frozen blueberries into the dough, being careful not to crush them.
  4. Prepare surface and shape biscuits: Sprinkle a clean, flat surface generously with Bisquick (about 1/2 cup) and also dust the other side of the dough. Turn the dough out onto the surface. Pat the dough down to about 1 1/2 inches thick.
  5. Cut biscuits: Use a biscuit cutter to cut the dough into biscuits. Avoid twisting the cutter to ensure the biscuits rise properly.
  6. Place in melted butter and bake: Arrange the biscuits in the pan with the melted butter. Bake in the preheated oven for 15-20 minutes or until the tops are golden brown.
  7. Prepare glaze: In a small bowl, mix 1 cup powdered sugar, 1 teaspoon lemon zest, and 2 tablespoons lemon juice to create a smooth glaze.
