Ingredients

Chicken

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons extra virgin olive oil
  • ⅛ teaspoon sea salt (thick flakes of fresh ground salt preferred)
  • ¼ teaspoon black pepper (thick flakes of fresh ground black pepper preferred)

Sauce and Garnish

  • 1 cup Boursin cheese (homemade or 5.2 ounce container)
  • ¼ cup milk (any kind)
  • ⅛ cup fresh chives, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the chicken.
  2. Prepare Chicken: Brush both sides of the chicken breasts generously with extra virgin olive oil. Season well with sea salt and black pepper, using thick flakes of fresh ground salt and pepper for optimal flavor.
  3. Add Boursin Cheese: Place the chicken breasts in a baking dish or cast iron skillet. Add a ¼ cup dollop of Boursin cheese on top of each chicken breast, spreading slightly if desired.
  4. Bake Chicken: Bake the chicken in the preheated oven for 25 minutes, or until the internal temperature reaches 165°F (74°C) to ensure they are fully cooked and juicy.
  5. Make Cheese Sauce: Remove the chicken from the oven and transfer the baking dish or skillet to the stovetop. Place over medium-low heat. Add ¼ cup milk and scrape the melted Boursin cheese off the chicken breasts into the milk. Stir or whisk gently around the chicken pieces to combine and create a smooth, creamy cheese sauce that coats the chicken.
  6. Garnish and Rest: Sprinkle the chopped fresh chives over the chicken as a garnish. Allow the chicken to rest for 5 to 10 minutes to let the flavors meld before serving.

Notes

  • Use thick flakes of fresh ground sea salt and black pepper for the best seasoning texture and flavor.
  • If you prefer, substitute Boursin cheese with a similar creamy herb cheese.
  • Any type of milk can be used; whole milk provides a richer sauce while plant-based milk can be used for lactose sensitivity.
  • Make sure to rest the chicken after cooking to keep it juicy and flavorful.
  • Use an oven-safe skillet or baking dish to transfer easily from oven to stovetop for sauce preparation.
