Ingredients

Pineapple & Mango Compote

  • 1 cup pineapple, chopped
  • 1 cup mango, chopped
  • 2 tbsp sweetener of your choice
  • 2 tsp lime juice

Strawberry Compote

  • 2 cups strawberries, quartered
  • 1 tbsp sweetener of your choice
  • 1 tsp lemon juice
  • 1 tsp vanilla extract

Blueberry Compote

  • 2 cups blueberries (frozen or fresh)
  • 1 tbsp sweetener of your choice
  • 1 tsp lemon juice

Additional Ingredient

  • 3 cups Greek yogurt

Instructions

  1. Prepare the fruit compotes: In three separate saucepans, place each set of fruit with the corresponding sweetener, citrus juice, and vanilla (for strawberry). Bring each to a gentle simmer over medium heat. Let them simmer for 10 to 15 minutes, stirring occasionally, until the fruit breaks down and the mixtures thicken slightly. Remember, the compotes will continue to thicken as they cool.
  2. Cool the compotes: Remove the pans from heat and allow all fruit compotes to cool completely to room temperature before assembling. Cooling helps the flavors meld and prevents the yogurt from becoming watery when layered.
  3. Assemble the yogurt cups: In sealable jars or containers, layer the Greek yogurt alternately with the cooled compotes to create colorful, tasty breakfasts. Start with some yogurt, then a spoonful of a compote, repeating until the jars are filled.
  4. Store and serve: Seal the containers and refrigerate for up to 5 days. Serve chilled, perfect for a quick and nutritious breakfast or snack anytime.
