Ingredients

Cauliflower Batter

  • ¼ teaspoon ground black pepper

Buffalo Sauce

  • 3 to 4 tablespoons Frank’s Red Hot sauce, to taste
  • 2 tablespoons unsalted butter, melted

Dip

  • 1 recipe ranch dressing (store-bought or homemade)

Instructions

  1. Season the cauliflower. Preheat the oven to 425°F (220°C). In a large mixing bowl, whisk together cornstarch, water, garlic powder, paprika, kosher salt, and ground black pepper until you achieve a light pancake-batter consistency. Add the cauliflower florets and gently toss until they are thoroughly coated. Alternatively, place the florets and batter into a large Ziploc bag and shake to combine.
  2. Bake the cauliflower. Arrange the coated florets in a single layer on a parchment-lined baking sheet. Bake in the preheated oven for 20 to 25 minutes, stirring halfway through, until the cauliflower edges turn golden and slightly crispy.
  3. Make the buffalo sauce. While the cauliflower bakes, stir together Frank’s Red Hot sauce and melted unsalted butter in a small mixing bowl until fully combined.
  4. Coat and finish baking. Remove the baking sheet from the oven and brush the buffalo sauce evenly over the baked cauliflower. Return the cauliflower to the oven and bake for an additional 10 to 15 minutes, or until the sauce starts to brown slightly and the cauliflower is tender but crisp.
  5. Serve warm. Transfer the buffalo cauliflower to a serving platter and serve immediately with ranch dressing on the side for dipping.
