  • Fresh vegetables (carrots, cucumber, celery, bell peppers recommended)

Instructions

  1. Blend the ingredients: In a high-powered blender, add the drained chickpeas, reserved chickpea liquid, tahini, olive oil, fresh lemon juice, lemon zest, peeled garlic cloves, and sea salt. Alternatively, if preferred, remove the skins from the chickpeas and transfer all ingredients to a food processor for blending.
  2. Add salt and blend: Begin blending the mixture on low speed to combine the ingredients thoroughly. Gradually increase the speed to high and continue blending for about 5 minutes until the hummus becomes smooth, creamy, and well emulsified.
  3. Adjust texture and seasoning: If the hummus appears too thick or dry, add additional reserved chickpea liquid, one tablespoon at a time, blending between each addition until desired creaminess is reached. Taste and adjust the sea salt as needed to suit your preference.
