This easy corn salsa (or salad) is a fresh, vibrant mix of raw corn kernels, tomatoes, green peppers, onions, and cilantro, tossed with a zesty dressing made from red wine vinegar, olive oil, and a blend of spices. Perfect for a quick snack or a flavorful side dish, it can be enjoyed immediately or chilled to let the flavors meld beautifully.

Ingredients

Vegetables

  • 2 cups raw, uncooked corn kernels
  • 1 cup diced tomato
  • 1/2 cup diced green pepper
  • 1/2 cup finely diced sweet onion

Dressing

  • 2 tablespoons red wine vinegar
  • 2 teaspoons extra virgin olive oil

  • 1/4 – 1/2 teaspoon chipotle chili pepper powder
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon cumin

Instructions

  1. Combine Vegetables: In a medium bowl, combine the raw corn kernels, diced tomato, diced green pepper, finely diced sweet onion, and chopped cilantro if using.
  2. Make Dressing: In a small bowl, whisk together the red wine vinegar, extra virgin olive oil, kosher salt, chipotle chili pepper powder, black pepper, and cumin until fully blended.
  3. Toss Ingredients: Pour the dressing over the mixed vegetables and stir thoroughly to ensure the salsa is evenly coated with the dressing.
