Ingredients

Chicken and Seasoning

  • 3 chicken breasts, butterflied into half cutlets
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon oil
  • 1 teaspoon butter
  • 1.5 tablespoons butter

Vegetables

  • 8 oz mushrooms, sliced
  • 3 small colored bell peppers (red, green, and yellow), ringed or striped
  • 4-5 garlic cloves, chopped

Herbs and Dairy

  • ¼ teaspoon dried thyme
  • ¼ teaspoon dried rosemary
  • ¼ cup fresh parsley, chopped
  • 1.5 cups heavy whipping cream
  • ½ cup parmesan cheese
  • Salt to taste
  • Pepper to taste

Instructions

  1. Prepare the Chicken: Butterfly the chicken breasts into half cutlets for even cooking. Season both sides with onion powder, garlic powder, dried rosemary, dried thyme, salt, and pepper to infuse the chicken with herbaceous flavors.
  2. Sear the Chicken: Heat the oil and 1 teaspoon of butter in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook until golden and cooked through, about 4-5 minutes per side. Remove chicken and set aside.
  3. Sauté Vegetables: In the same skillet, add 1.5 tablespoons of butter. Then add sliced mushrooms, ringed or striped bell peppers, and chopped garlic. Sauté until the vegetables are tender and aromatic, about 5-7 minutes.
  4. Add Herbs and Cream: Sprinkle the sautéed vegetables with dried thyme and rosemary. Pour in the heavy whipping cream and stir to combine, letting the sauce simmer gently.
  5. Incorporate Cheese and Season: Stir in the parmesan cheese until melted and the sauce becomes creamy. Season with salt and pepper to taste, adjusting to your preference.
  6. Combine Chicken and Sauce: Return the cooked chicken breasts to the skillet, spooning some of the sauce over them. Allow everything to warm together for a couple of minutes so the flavors meld.
  7. Finish with Fresh Parsley: Sprinkle freshly chopped parsley over the skillet just before serving to add a fresh, vibrant finish to the creamy chicken dish.
