This Easy Mexican Black Beans recipe offers a flavorful and quick way to prepare hearty black beans infused with aromatic spices like cumin, paprika, and garlic. Perfect as a side dish or protein-packed addition to any Mexican-inspired meal, it combines simplicity with rich taste in just 25 minutes.

Ingredients

Main Ingredients

  • 2 teaspoons olive oil
  • 1/2 white onion, diced
  • 2 cloves garlic, minced
  • 3 (15 oz) cans black beans, do not drain the liquid

Spices

  • 2 teaspoons ground cumin
  • 1 1/2 teaspoons paprika
  • 1 teaspoon smoked paprika
  • 1 teaspoon granulated garlic
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste

Instructions

  1. Prepare the aromatics: Heat a large pan over medium heat and add olive oil, diced onion, and a pinch of salt. Cook until the onion is soft and beginning to brown, about 5-7 minutes. Then add the minced garlic and cook for another minute until fragrant.
  2. Combine beans and spices: Pour the cans of black beans with their liquid into the pan. Slightly drain a tiny amount of liquid if desired but keep most of it for flavor. Add the ground cumin, paprika, smoked paprika, granulated garlic, onion powder, salt, and black pepper. Stir well to evenly coat the beans with the spices.
  3. Simmer and mash: Let the beans cook for 5-10 minutes on medium-low heat to allow the flavors to meld. Optionally, use the back of a wooden spoon or a potato masher to lightly mash some of the beans to create a thicker, saucier consistency without turning them into refried beans.
  4. Adjust consistency and finish: Add extra bean liquid or water if you prefer soupier beans, or cook longer and mash more to thicken. Taste and adjust seasoning if needed before serving.

Notes

  • Do not fully drain the canned beans; the liquid helps create a creamy texture and carries flavor.
  • You can adjust the amount of smoked paprika to increase smokiness according to your taste preference.
  • These beans can be served as a side dish, in burritos, tacos, or over rice.
  • For thicker beans, simmer longer and mash more; for soupier beans, add additional liquid.
