Cake Batter

  • 3/4 cup soy milk (unsweetened)
  • 1 tablespoon apple cider vinegar (or lemon juice)
  • 3/4 cup sunflower seed oil (or other neutral vegetable oil)
  • 1/2 tablespoon vanilla extract (or pistachio extract)
  • 1 cup granulated white sugar
  • 1/2 teaspoon sea salt
  • 1 3/4 cups all-purpose flour (spooned into the cup, not packed; divided, see instructions)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 cup Setton Farms Raw Pistachio Kernels
  • 1 small bottle vegan liquid green food dye

Frosting

  • 6 cups powdered sugar
  • 2 cups dairy-free butter (not margarine; softened at room temperature for at least 1 hour)
  • 1/4 cup Setton Farms Raw Pistachio Kernels
  • 1 teaspoon vanilla extract (or pistachio extract; optional)
  • 5 tablespoons dairy-free cream cheese
  • Vegan liquid green food dye

Instructions

  1. Make the Batter & Bake the Cake Layers: Preheat the oven to 350ºF and line three 7-inch cake pans with parchment paper or grease them. In a mixing bowl, combine soy milk and apple cider vinegar to create vegan buttermilk. Add the sunflower oil, vanilla extract, sugar, and sea salt. Sift 1 1/2 cups of flour (reserve 1/4 cup separately), then add it along with baking powder and baking soda into the bowl. Mix thoroughly.
  2. Prepare Pistachios: In a blender or food processor, add half of the raw pistachios and process them until crumbly. Add the remaining pistachios and pulse again until one portion is very crumbly and the other is chunkier, resembling chopped pistachios. Set aside.
  3. Divide and Color Batter: Divide the batter evenly into three small bowls. For the top layer, add 2 1/2 tablespoons all-purpose flour and 3 tablespoons of the pistachio mixture. For the middle layer, add 1 1/2 tablespoons flour, 4 tablespoons pistachio mix, and 5-10 drops of green food dye. For the bottom layer, add 5 tablespoons pistachio mix and about 15 drops of green food dye (add more if needed). Mix each layer until combined; colors should range from natural to light green to dark green.
  4. Bake the Cake Layers: Pour each batter mixture into the prepared pans and place them slightly below the middle rack in the oven. Bake for approximately 25 minutes or until a toothpick inserted comes out clean. Allow them to cool for at least 30-35 minutes. For quicker cooling and easier frosting, wrap layers in plastic and freeze briefly once cool enough to handle.
  5. Prepare Pistachio Flour for Frosting: Using a blender or food processor, process pistachios into a very fine, flour-like texture. Sift to retain only the finest powder for the frosting; reserve any larger chunks for decorating between layers.
  6. Make the Frosting: Cut the dairy-free butter into cubes and cream in a stand mixer bowl. Gradually add powdered sugar and the pistachio flour, mixing until smooth. Add the dairy-free cream cheese and vanilla extract, and mix thoroughly until creamy and fluffy.
  7. Divide and Tint Frosting: Remove about two-thirds of the frosting and set aside. Add a few drops of green food dye to the remaining frosting to create a very light green color. Mix well.
  8. Assemble the Cake: Once cake layers are completely cooled, spread the light green frosting between each layer and apply a thin coat around the entire cake. Reserve any leftover light green frosting for piping decoration.
  9. Pipe Ombre Buttercream Roses: Use a piping bag fitted with a 2D nozzle to pipe buttercream roses starting with the lightest shade on top of the cake. If needed, mix leftover light green frosting with the set-aside frosting and add additional green dye to reach the desired middle shade, piping this around the middle layer of the cake.
  10. Complete Decoration: Add more green dye to the remaining frosting to achieve a dark green color and pipe the final layer of roses around the bottom edge of the cake. Adjust nozzle size or add more shades if desired for a more intricate ombre effect.
  11. Serve: Your pistachio ombre cake is now ready to be enjoyed. Slice and serve chilled or at room temperature for best flavor and texture.
