This Easy Pomegranate Salsa is a fresh, vibrant snack combining juicy pomegranate arils with zesty lime, honey, and a touch of jalapeño heat. Perfect as a topping or a standalone treat, it’s quick to prepare and bursting with bright, balanced flavors.

Ingredients

Fruit and Vegetables

  • 2 cups pomegranate arils (see note)
  • 1/2 cup chopped cilantro
  • 1/3 cup finely chopped red onion
  • 1-3 tablespoons seeded, minced jalapeño (from about 1 small pepper; adjust amount of heat to taste)

Seasonings and Condiments

  • 2 tablespoons lime juice
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon honey

Instructions

  1. Combine fresh ingredients: In a medium bowl, gently toss together the pomegranate arils, chopped cilantro, finely chopped red onion, and minced jalapeño to distribute the flavors evenly without crushing the delicate pomegranate seeds.
  2. Make the dressing: In a small bowl, whisk together the lime juice, extra virgin olive oil, and honey until the mixture is smooth and emulsified, balancing the tartness with a touch of sweetness and richness.
  3. Mix salsa and serve: Pour the dressing over the pomegranate mixture and stir gently to coat all components. Serve the salsa immediately for the freshest taste, or cover and refrigerate for at least an hour to let the flavors meld. It can be stored covered in the fridge for 1-2 days.

Notes

  • Adjust the jalapeño amount based on your preferred spice level, removing seeds to reduce heat.
  • Pomegranate arils can be removed from the fruit by gently tapping the back with a spoon over a bowl to collect seeds easily.
  • This salsa pairs wonderfully with grilled meats, fish, or as a topping for tacos and salads.
  • For a vegan version, substitute honey with agave syrup or maple syrup.
