Ingredients

Rice and Cooking Base

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon butter
  • 1 cup long grain white rice
  • 1 cup chicken broth or stock (approximately)
  • 1 cup tomato sauce or puree (approximately)

Spices and Vegetables

  • 1 1/2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon dried oregano
  • 1/4 cup diced fresh tomatoes (seeded and drained, optional)

Instructions

  1. Toast the Rice: In a medium saucepan set over medium heat, melt together the olive oil and butter. Add the rice and stir to coat it with the oil and butter. Cook, stirring frequently, for about 2 to 3 minutes until the rice is lightly toasted and fragrant.
  2. Add Liquids and Seasonings: Stir in the chicken broth, tomato sauce, chili powder, cumin, garlic salt, oregano, and diced tomatoes if using. Increase the heat to high and bring the mixture to a boil, stirring occasionally to combine all ingredients well.
  3. Simmer the Rice: Once boiling, stir well, reduce the heat to low, cover the saucepan with a lid, and cook at a gentle simmer for 20 minutes, or according to the rice package instructions. If after 20 minutes the rice is not tender or liquid remains, keep covered and cook for an additional 2 to 4 minutes until fully cooked and liquid is absorbed.
  4. Rest and Fluff: Remove the saucepan from heat and keep it covered. Allow the rice to rest for a few minutes to finish steaming. Then fluff the rice gently with a fork before serving.
