Easy Steak Tagliata is a flavorful Italian-inspired dish featuring tender beef fillet cooked to perfection, drizzled with a zesty sundried tomato dressing, and topped with fresh Parmesan and peppery arugula. Perfect for a quick yet impressive meal, this recipe combines simple ingredients and straightforward cooking techniques for a delicious steak dish served sliced and dressed.

Ingredients

Steak

  • 500 g (1 lb) fillet / beef tenderloin
  • 1 tbsp olive oil
  • 2 tsp salt

Dressing

  • 6 sundried tomatoes
  • ¼ cup olive oil
  • ¼ cup soy sauce
  • 1 tbsp lemon juice
  • 2 garlic cloves, crushed
  • 1 tsp finely chopped rosemary
  • Salt and pepper, to taste

To Serve

  • Parmesan cheese, shaved
  • Fresh rocket (arugula)

Instructions

  1. Prepare the steak: Drizzle the beef fillet generously with 1 tablespoon of olive oil and season all over with 2 teaspoons of salt. This will help create a flavorful crust during cooking.
  2. Cook the steak: Heat a pan or grill until very hot. Place the steak on the heat and cook for 3-5 minutes per side, depending on your preferred doneness. Rare to medium rare is recommended for tender results.
  3. Rest the steak: Remove the steak from heat and let it rest undisturbed for at least 10 minutes. Resting allows the juices to redistribute, ensuring a moist and tender steak.
  4. Make the dressing: Finely chop the sundried tomatoes and crush the garlic cloves. Combine them in a bowl along with ¼ cup olive oil, ¼ cup soy sauce, 1 tablespoon lemon juice, and 1 teaspoon finely chopped rosemary. Season with salt and pepper to taste and mix well. Optionally, use a food processor for a smoother dressing.
  5. Slice and assemble: Thinly slice the rested steak and arrange the slices on a serving plate. Drizzle the prepared dressing evenly over the steak slices.
  6. Garnish and serve: Top the dressed steak with generous shavings of Parmesan cheese and fresh rocket (arugula). Serve immediately for best flavor and texture.

Notes

  • Allowing the steak to rest is crucial for retaining juices and tenderness.
  • For a smoother dressing texture, blend ingredients in a food processor.
  • Adjust steak cooking time according to thickness and preferred doneness.
  • Use fresh herbs if possible for maximum flavor.
  • Pair with crusty bread or a light salad for a complete meal.
