Easy Turkish Eggs is a simple and delightful breakfast or brunch dish featuring creamy Greek yogurt topped with perfectly cooked eggs and a flavorful spiced butter sauce. This quick recipe combines garlic, chili flakes, and smoked paprika infused butter poured over boiled, poached, or fried eggs served on a bed of seasoned yogurt, garnished with fresh herbs and enjoyed best with pita or flatbread.

Ingredients

For the Yogurt Base

  • 2 cups Greek yogurt
  • Salt and black pepper, to taste

For the Spiced Butter Sauce

  • 1 garlic clove, sliced or minced
  • 3 tbsp butter
  • ½ – 1 tsp chili flakes
  • ½ tsp smoked paprika

For the Eggs and Garnish

  • 4 eggs (boiled, poached, or fried)
  • Fresh herbs (parsley, dill, or chives), for garnish

Instructions

  1. Prepare the Yogurt: Spoon the Greek yogurt into a small bowl and season with salt and black pepper to taste, ensuring the yogurt base is flavorful and creamy.
  2. Make the Spiced Butter: Heat a small skillet or pan over medium-high heat and melt the butter. Add the sliced or minced garlic, chili flakes, and smoked paprika to the melted butter.
  3. Cook Butter for Flavor: Cook the butter mixture for about one minute until the butter is melted, fragrant, and slightly foamy. Remove from heat immediately to prevent burning.
  4. Cook the Eggs: Prepare the eggs according to your preference. The recipe suggests boiling the eggs for 7 minutes to achieve a soft but set yolk. Alternatively, you can poach or fry them.
  5. Assemble the Dish: Divide the seasoned yogurt evenly between two serving bowls. Place the cooked eggs on top of the yogurt, then drizzle over several tablespoons of the spiced butter sauce, coating the eggs and yogurt with flavor.
  6. Garnish and Serve: Finish by garnishing with fresh herbs such as parsley, dill, or chives. Serve immediately, ideally alongside pita bread or your favorite flatbread for dipping and enjoying the creamy, spicy combination.

Notes

  • Cooking time for eggs can be adjusted depending on how runny or firm you prefer the yolks.
  • Use full-fat Greek yogurt for the best creamy texture and flavor.
  • You can customize the spiced butter by adjusting the amount of chili flakes for more or less heat.
  • Serve with warm pita or flatbread to soak up the yogurt and butter sauce.
  • Fresh herbs add a bright contrast but can be omitted if unavailable.
