Ingredients

Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • 1/2 cup finely grated English cucumber (squeezed dry)
  • 2 tablespoons lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1 garlic clove (pressed or finely minced)
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh mint
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly-ground black pepper

Chicken Salad

  • 3 cups diced cooked chicken
  • 1 cup diced English cucumber
  • 1 (15-ounce) can chickpeas (rinsed and drained)
  • 1/2 cup crumbled feta cheese
  • 1/3 cup finely diced red onion
  • 1/4 cup chopped fresh dill
  • 1 tablespoon lemon juice (plus more to taste)
  • 1/2 cup toasted sliced almonds
  • Fine sea salt and freshly-ground black pepper (to taste)

Instructions

  1. Make the tzatziki. In a medium bowl, stir together plain Greek yogurt, grated cucumber (squeezed dry), lemon juice, extra-virgin olive oil, garlic, fresh dill, fresh mint, sea salt, and black pepper until well combined. Taste the sauce and adjust seasoning by adding more lemon juice, garlic, salt, or pepper if desired.
  2. Mix the chicken salad. In a large mixing bowl, combine diced cooked chicken, diced English cucumber, rinsed and drained chickpeas, crumbled feta cheese, finely diced red onion, and chopped fresh dill. Mix them gently to combine evenly.
  3. Add the tzatziki. Pour the prepared tzatziki sauce over the chicken salad mixture. Gently toss the ingredients until everything is evenly coated with the sauce. Add the additional tablespoon of lemon juice, then taste and season with more salt and pepper if needed.
  4. Chill. Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld and develop.
  5. Add the almonds. Just before serving, gently stir in the toasted sliced almonds to maintain their crunchiness and add texture to the salad.
  6. Serve. Serve the tzatziki chicken salad chilled. It can be enjoyed in pita bread, wraps, lettuce cups, over a bed of greens, or alongside crackers for a versatile and delicious meal.

  • For best results, use cooked chicken breast, either rotisserie chicken or leftover chicken grilled or roasted.
