This quick and easy Egg Salad recipe combines perfectly mashed hard-boiled eggs with creamy mayonnaise, tangy lemon juice, and Dijon mustard, complemented by fresh celery, chives, and dill. It’s a classic, flavorful dish ideal for sandwiches, salads, or as a refreshing snack, ready in just 40 minutes including chilling time.

Ingredients

Egg Salad Ingredients

  • 10 large hard-boiled eggs
  • 1/3 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly cracked black pepper
  • 1 large celery rib, finely chopped
  • 2 tablespoons chopped fresh chives
  • 2 teaspoons dill

Instructions

  1. Prepare the eggs: Peel the hard-boiled eggs and slice them in half lengthwise. Carefully separate the whites and set aside. Place the yolks in a medium-sized mixing bowl.
  2. Mash the yolks: Add the mayonnaise, lemon juice, Dijon mustard, salt, and freshly cracked black pepper to the yolks. Use a potato masher to mash everything together until smooth and creamy.
  3. Combine egg whites and vegetables: Chop the egg whites into small 1/4-inch pieces and gently fold them into the yolk mixture. Add the finely chopped celery, fresh dill, and chives, mixing lightly to incorporate all ingredients evenly.
  4. Chill the salad: Cover the bowl tightly with plastic wrap and refrigerate the egg salad for at least 30 minutes to allow flavors to meld. It can be chilled for up to one day ahead.
  5. Serve: Before serving, taste and season with additional salt and pepper if needed. Serve the egg salad over a bed of fresh lettuce or as a filling in croissants or bread for delicious sandwiches.

Notes

  • Hard boil the eggs a day ahead to save time.
  • For a lighter version, substitute mayonnaise with Greek yogurt.
  • Add a pinch of smoked paprika or cayenne pepper for a subtle spicy kick.
  • Use fresh herbs like chives and dill for the best flavor.
  • Keep the salad chilled until serving to maintain freshness and food safety.
