Enoki Beef Rolls are a flavorful Japanese-inspired dish featuring tender thinly sliced beef wrapped around delicate enoki mushroom bunches, simmered in a savory dashi-based sauce with caramelized onions and finished with scrambled egg. This quick and easy recipe delivers a perfect balance of umami, sweetness, and a pleasant texture contrast, ideal for a comforting meal served with steamed rice.

Ingredients

Beef Rolls

  • 12 slices thinly sliced beef
  • 1 pack enoki mushrooms (split into 12 pieces)

Sauce

  • 1 cup dashi broth (homemade or store-bought)
  • 2 tablespoon mirin
  • 3 tablespoon soy sauce
  • 1/2 tablespoon sugar
  • 1/4 teaspoon black pepper

Other Ingredients

  • 1/2 small yellow onion, sliced
  • 2 large eggs
  • 1 tablespoon olive oil
  • 1 stalk green onion, diced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. Prep the enoki beef rolls: Divide the enoki mushrooms into small bunches, approximately 12, and roll each bunch tightly with one slice of thinly sliced beef. Set aside while preparing the sauce.
  2. Mix the sauce: In a small mixing bowl, combine the dashi broth, mirin, soy sauce, sugar, and black pepper thoroughly until the sugar dissolves and the sauce is well blended.
  3. Cook the onions: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced yellow onions and cook, stirring occasionally, until they become translucent, lightly caramelized, and slightly browned, about 3 to 5 minutes.
  4. Add the enoki beef rolls and sauce: Arrange the prepared enoki beef rolls in a single layer over the cooked onions. Pour the prepared sauce evenly over the rolls. Cover the skillet and let cook for 3 minutes, then carefully flip each roll and cook uncovered for an additional 1 to 2 minutes to ensure even cooking.
  5. Add the egg: In a separate bowl, lightly scramble the two eggs. Then drizzle the eggs evenly over the beef rolls in the skillet. Cover and simmer gently until the eggs are fully cooked and set, approximately 2 minutes.
  6. Serve: Remove from heat. Garnish the enoki beef rolls with diced green onion and sprinkle sesame seeds on top. Serve hot alongside steamed rice for a complete meal. Enjoy your flavorful enoki beef rolls!

Notes

  • If dashi broth is not available, you can substitute with a mild chicken or vegetable broth, but authentic dashi provides the best traditional flavor.
  • Use high-quality thinly sliced beef, such as ribeye or sirloin, for tender and flavorful rolls.
  • Ensure not to overcook the beef to keep it tender; cooking times may vary slightly depending on thickness.
  • For additional flavor, you can add a splash of sake to the sauce if desired.
  • This recipe is best enjoyed fresh but leftovers can be refrigerated and gently reheated.
