Ingredients

Puff Pastry

  • 1 sheet puff pastry (250 g), thawed

Filling

  • 2 tsp (10 g) fresh lemon juice
  • 1 tsp (4 g) vanilla extract
  • 4 cups (480 g) peeled and sliced apples (1/8-inch thick)
  • 1/2 cup (100 g) granulated sugar
  • 2 Tbsp (16 g) cornstarch
  • 1/2 tsp ground cinnamon
  • 1/8 tsp salt
  • 2 Tbsp (28 g) cold unsalted butter, cubed

Topping

  • 1 Tbsp (15 g) heavy cream
  • 1 Tbsp (15 g) coarse sugar

Instructions

  1. Preheat Oven and Prepare Pastry: Preheat your oven to 425°F (220°C). Roll out the thawed puff pastry on a lightly floured surface into an 11 x 12-inch rectangle. Transfer it to a 9 or 10-inch cast iron skillet and chill for 10 minutes to keep it firm while preparing the filling.
  2. Make Filling: In a large bowl, combine fresh lemon juice and vanilla extract. Add the peeled and thinly sliced apples, tossing to coat evenly. Sprinkle granulated sugar, cornstarch, ground cinnamon, and salt over the apples, then mix thoroughly to blend all the flavors.
  3. Assemble Galette: Evenly spread the apple mixture over the chilled puff pastry within the skillet. Drizzle about two teaspoons of the accumulated juices from the filling over the apples and dot the surface with cubed cold butter. Fold the edges of the pastry up and over the filling, pressing firmly to seal the crust border. Brush the exposed pastry edges with heavy cream and sprinkle coarse sugar over the top for extra crunch and shine.
  4. Bake Galette: Place the skillet in the preheated oven and bake for 10 minutes at 425°F to set the pastry. Without opening the oven door, reduce the temperature to 375°F (190°C) and continue baking for an additional 35 to 40 minutes. Bake until the apple filling is bubbly and the puff pastry is golden brown and fully cooked.
  5. Cool and Serve: Remove the galette from the oven and set the skillet on a wire rack to cool for 10 minutes. Use a thin metal spatula to gently loosen the edges and bottom of the galette from the skillet before slicing and serving warm or at room temperature.
