Ready in just 20 minutes, it’s a perfect savory meal for a quick lunch or casual dinner.

Ingredients

Sandwich

  • 1 loaf French Bread
  • 1 lb sliced Roast Beef
  • 8 oz Provolone Cheese
  • 3-4 tbsp Mayonnaise

Au Jus Dipping Sauce

  • 1 can condensed French Onion Soup
  • 1 can condensed Beef Broth
  • 1 cup water

Instructions

  1. Prepare the Au Jus: Drain most of the liquid from the can of condensed French onion soup into a small saucepan, separating the onions from the liquid. Place the onions and the remaining liquid into a separate skillet. Add the beef broth and 1 cup of water to the saucepan with the French onion soup liquid and bring to a simmer, stirring occasionally. This mixture will serve as the flavorful au jus dipping sauce.
  2. Warm Roast Beef with Onions: While the au jus is simmering, add the sliced roast beef to the skillet containing the onions from the French onion soup. Heat over medium heat, stirring occasionally, just until the roast beef is warmed through. Be careful not to overcook the beef to keep it tender.
  3. Toast the French Bread: Slice the French bread loaf lengthwise into two halves. Spread mayonnaise evenly on both halves. Place the bread under the oven broiler until the bread is lightly toasted and golden brown.
  4. Add Cheese and Melt: Layer the provolone cheese slices over one half of the toasted French bread. Return the bread with cheese under the broiler for a minute or two if you desire melted cheese. Watch closely to avoid burning.
  5. Assemble the Sandwich: Spread the warm roast beef and onions over the other half of the toasted bread. Close the sandwich by bringing the two halves together.
  6. Slice and Serve: Cut the sandwich into serving portions and serve immediately with the hot au jus dipping sauce on the side for dipping.

Notes

  • Make sure not to overcook the roast beef during warming to keep it tender and juicy.
  • Broil the bread just until golden to avoid burning.
  • You can substitute provolone with other melty cheeses like Swiss or mozzarella, if desired.
  • To enhance the au jus flavor, add a splash of Worcestershire sauce or a pinch of black pepper.
  • Use a crusty French bread for the best texture and bite.
