This Fresh Cherry Crisp with Almond Oatmeal Crumble is a delightful dessert featuring juicy cherries baked under a crunchy almond and oat topping. The combination of tart cherries and a sweet, buttery crumble infused with vanilla and almond extracts creates a perfect balance of flavors. Easy to make and perfect for any season, it’s a comforting treat served warm, optionally topped with vanilla ice cream.

Ingredients

Dry Ingredients

  • 1 cup (120g) all-purpose flour (or oat flour)
  • ½ cup (107g) packed light brown sugar
  • ⅓ cup (28g) sliced almonds (optional)
  • ⅓ cup (32g) rolled oats, gluten free if desired
  • 6 tablespoons salted butter, melted (or substitute vegan butter)

Wet Ingredients

  • 2 pounds fresh or frozen cherries, pitted
  • ¼ cup (39g) pure maple syrup
  • 1 tablespoon cornstarch (or arrowroot starch)
  • 1 tablespoon amaretto (optional, but recommended)
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract

Instructions

  1. Preheat and Prepare the Pan: Preheat your oven to 350°F (175°C). Grease a 10-inch oven-safe skillet or a 9×9 inch baking pan with nonstick cooking spray to prevent sticking.
  2. Make the Topping: In a medium bowl, combine the flour, brown sugar, sliced almonds (if using), and rolled oats. Pour in the melted butter and mix with a fork until the mixture starts to clump and resembles moist, crumbly wet sand. Use your hands if needed to form larger clumps. Cover and chill in the refrigerator for about 5 minutes until ready to use.
  3. Prepare the Cherry Filling: Place the pitted cherries directly into the prepared pan. Add the maple syrup, cornstarch, amaretto (if using), vanilla extract, and almond extract. Stir gently until the cherries are evenly coated with the mixture. Mixing directly in the pan helps reduce cleanup.
  4. Assemble and Bake: Evenly sprinkle the oatmeal almond crumble topping over the cherry filling. Bake in the preheated oven for 40 to 50 minutes, or until the cherry filling is bubbling and the topping is golden brown and crisp.
  5. Cool and Serve: Remove from the oven and let the crisp cool for about 10 minutes to thicken slightly. Serve warm, optionally topped with vanilla ice cream for an extra indulgent treat.

Notes

  • You can use fresh or frozen cherries; if frozen, no need to thaw before baking.
  • Amaretto adds a lovely almond flavor but is optional.
  • Use oat flour to make this recipe gluten-free.
  • For a vegan version, substitute butter with vegan butter.
  • Serve with vanilla ice cream or whipped cream for a richer dessert experience.
  • Ensure cherries are pitted to avoid any discomfort while eating.
