Ingredients

For the Crust

  • 3/4 cup sugar
  • 1 1/4 cups flour

For the Cream Cheese Frosting

  • 12 ounces cream cheese, softened
  • 1/4 cup butter, softened

For the Topping

  • 7-10 strawberries, sliced
  • 5-6 kiwis, sliced
  • 1 mango, sliced
  • 1/2 cup blueberries
  • 1 small bunch of grapes, halved

Instructions

  1. Make the Crust: In a mixing bowl, combine softened butter, sugar, egg, and vanilla extract. Mix well using an electric mixer or a spoon if butter is melted. Add flour, baking powder, and salt; mix until a uniform dough forms. Chill the dough in the refrigerator for 30 minutes to firm up.
  2. Bake the Crust: Preheat the oven to 350°F (175°C). Line a baking stone or baking sheet with parchment paper. Roll the chilled dough out onto the parchment to about 1/4 to 1/2 inch thickness, leaving a bit of space around edges. Bake for 20-25 minutes until lightly golden. Remove and let cool completely.

Make the Cream Cheese Frosting: Using an electric mixer, blend the softened cream cheese, softened butter, powdered sugar, and vanilla extract until the mixture is smooth, creamy, and well combined. Spread this frosting evenly over the cooled cookie crust. Chill the assembled pizza again to allow the frosting to firm up.
  4. Decorate the Pizza: Arrange the sliced strawberries, kiwis, mango, blueberries, and halved grapes evenly over the cream cheese frosting. Create patterns or designs as desired to make it visually appealing. Serve chilled for best taste and texture.
