Garlic Herb Baked Cod is a quick and flavorful seafood dish featuring tender cod filets topped with a savory garlic herb butter mixture and fresh lemon slices. Baked to perfection, it delivers a deliciously moist and flaky texture, perfect for a healthy weeknight dinner.

Ingredients

Fish

  • 4 (6-ounce) cod filets

Compound Butter Mixture

  • 3 tablespoons butter (softened)
  • 1 tablespoon extra virgin olive oil
  • 3 garlic cloves (minced)
  • 2 tablespoons parsley, chives, thyme or other herbs (finely chopped)
  • ½ teaspoon paprika
  • Kosher salt (to taste)
  • Freshly ground black pepper (to taste)

Garnish

  • 1 lemon (thinly sliced)

Instructions

  1. Preheat: Preheat your oven to 400°F (200°C) to get it ready for baking the cod.
  2. Place the cod: Arrange the cod filets evenly in a baking dish, ensuring there’s space around each filet for even cooking.
  3. Mix the compound butter: In a small bowl, combine the softened butter, extra virgin olive oil, minced garlic, chopped herbs, paprika, salt, and freshly ground black pepper. Stir well until fully blended.
  4. Spread it on the cod: Generously spread the compound butter mixture over the top of each cod filet to infuse flavor during baking.
  5. Add the lemon slices: Place thin lemon slices both beneath and on top of the cod filets to add fresh citrus notes and keep the fish moist.
  6. Bake the cod: Bake in the preheated oven for 13 to 15 minutes, or until the cod becomes opaque and flakes easily with a fork.
  7. Spoon the juices: Before serving, carefully spoon the flavorful cooking juices from the baking dish over the cod to enhance its taste and moisture.

Notes

  • Use fresh herbs for the best flavor, but dried herbs can be substituted in a pinch.
  • Ensure not to overbake the cod as it dries out quickly; check for flakiness after 13 minutes.
  • Serve with a side of steamed vegetables or rice for a complete meal.
  • For a dairy-free version, substitute butter with a plant-based margarine or additional olive oil.
