Ingredients

For the Tofu and Marinade

  • 1 (14-16 ounce) package super firm tofu or extra firm tofu, pressed well
  • 1/3 cup tamari (preferably low sodium)
  • 1 tablespoon pure maple syrup
  • 1/4 teaspoon toasted sesame oil
  • 1 1/2 teaspoons smoked paprika
  • 1/2 teaspoon granulated garlic OR 1/4 teaspoon freshly grated garlic

For Cooking

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2-3 cloves garlic, smashed
  • 1-2 sprigs each of fresh thyme, rosemary, and sage
  • Salt and black pepper, to taste

Instructions

  1. Optional Freezing for Texture: To achieve an extra chewy and spongy texture, freeze the unopened tofu package overnight until completely frozen, which turns the tofu yellow. Thaw it fully in the refrigerator. Once thawed, press the tofu well to remove excess liquid, which enables it to soak up more marinade.
  2. Prepare Marinade and Marinate Tofu: Slice the pressed tofu into 4-6 equal pieces according to your preference. In a ziplock bag or container, combine tamari, maple syrup, toasted sesame oil, smoked paprika, and granulated or fresh garlic to create the marinade. Add sliced tofu and ensure each piece is evenly coated. Refrigerate and marinate for at least 30 minutes, or up to overnight for deeper flavor infusion.
  3. Dry the Tofu: Remove tofu from the marinade and pat dry with paper towels to soak up any excess liquid on top. You may also gently squeeze the tofu slices to reduce moisture, which helps prevent burning during cooking.
  4. Pan-Sear Tofu with Garlic Herb Butter: Heat a large skillet over medium heat and add olive oil. Once hot, lay the tofu slices in a single layer. Cook for 4-5 minutes until the bottom turns a golden brown. Flip the slices and cook for 1 minute on the second side. Add butter, smashed garlic cloves, and fresh herb sprigs to the pan.
