  • 1 cup olives (mix of Kalamata and Castelvetrano), pitted and halved
  • 4 garlic cloves, minced
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ cup crumbled feta cheese
  • 2 tablespoons roughly chopped fresh parsley

Instructions

  1. Combine the vegetables: Preheat your oven to 425°F (220°C). In a large baking dish, mix cherry tomatoes, artichoke hearts, red onion, olives, minced garlic, extra-virgin olive oil, half of the lemon juice (about 1½ tablespoons), dried oregano, paprika, kosher salt, and black pepper until well combined.
  2. Roast the vegetables: Place the baking dish in the oven and roast the vegetable mixture for 12 to 15 minutes, or until the tomatoes soften and become jammy in texture.
  3. Add the cod: Remove the baking dish from the oven. Nestle the cod filets gently into the roasted vegetables. Drizzle a little extra olive oil over the fish, and lightly season with salt and pepper. Scatter the crumbled feta cheese evenly around the fish.
  4. Bake the cod: Return the baking dish to the oven and bake for an additional 10 to 12 minutes, or until the cod flakes easily with a fork and is cooked through.
  5. Finish and serve: Remove from the oven and garnish the cod and vegetables with chopped fresh parsley, lemon zest, and a squeeze of fresh lemon juice for brightness. Serve warm.

  • You can mix all the vegetables and seasonings in a separate bowl instead of directly in the baking dish to keep your dish clean before baking.
  • If you prepare everything directly in the baking dish, wipe down any smears on the edges before baking to help with presentation when serving.
