Ingredients

Yogurt Mixture

  • 1½ cups Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 tablespoon honey

Strawberries

  • 1 cup fresh strawberries, hulled and quartered
  • 1 tablespoon lemon juice
  • 1 tablespoon granulated sugar

Topping

  • 3 tablespoons old fashioned rolled oats (or granola)
  • 3 tablespoons sliced almonds (or granola)

Instructions

  1. Mix and chill the yogurt: In a medium bowl, combine 1½ cups Greek yogurt, 1 teaspoon vanilla extract, 1 teaspoon lemon zest, and 1 tablespoon honey. Stir the mixture until smooth and well combined. Cover the bowl and refrigerate overnight to let the flavors meld and the yogurt chill thoroughly.
  2. Prepare the strawberries: In a small bowl, gently toss 1 cup of hulled and quartered fresh strawberries with 1 tablespoon lemon juice and 1 tablespoon granulated sugar. Cover and refrigerate overnight, allowing the strawberries to soften and release their juices, creating a sweet and tangy syrup.
  3. Toast the topping and assemble: The next morning, heat a small pan over medium heat. Add 3 tablespoons old fashioned rolled oats and 3 tablespoons sliced almonds to the pan. Toast them, stirring frequently, for about 3 minutes or until they become lightly golden and fragrant. Remove from heat and let cool. For assembly, spoon some strawberry syrup into the base of a glass or jar. Layer with some yogurt, then a layer of strawberries along with their syrup, and sprinkle the toasted oat and almond mixture on top. Repeat the layering once more. Serve immediately and enjoy.
