A simple and flavorful recipe for grilled bell peppers that are tender, slightly charred, and seasoned with olive oil, sea salt, black pepper, and optional oregano and garlic. Perfect as a side dish or a healthy snack, ready in just 15 minutes.

Ingredients

Vegetables

  • 2 large bell peppers (any color)

Seasonings

  • 1 tablespoon olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon dried oregano (optional)
  • 1 garlic clove, minced (optional)

Instructions

  1. Prepare the Bell Peppers: Wash and dry the bell peppers thoroughly. Slice each pepper in half and carefully remove seeds and membranes to ensure they grill evenly and are easy to eat.
  2. Season the Peppers: Drizzle olive oil evenly over the pepper halves. Sprinkle with sea salt, ground black pepper, and dried oregano if using. Rub gently to coat the peppers thoroughly for balanced flavor.
  3. Preheat and Grill: Preheat your grill or a grill pan on the stovetop to medium-high heat. Place the bell peppers skin side down on the grill. Grill for 5 to 7 minutes until the skins are charred and blistered; then flip the peppers over and grill the flesh side for an additional 2 to 3 minutes until tender but still slightly firm.
  4. Finish and Serve: Remove the grilled peppers from the heat and transfer to a serving plate. Optionally sprinkle minced garlic over the top for an extra burst of flavor. Serve warm or at room temperature as a delicious side dish or appetizer.

Notes

  • You can use any color combination of bell peppers for a variety of flavors and a colorful presentation.
  • Be careful not to overcook the peppers; they should be tender yet retain some firmness.
  • If you don’t have a grill, a grill pan or cast iron skillet works well to create the charred effect.
  • For a smoky flavor, consider using smoked sea salt or adding a dash of smoked paprika.
  • The garlic is optional but highly recommended for enhancing the flavor profile.
