Ingredients

Vegetables & Fruits

  • 2 corn on the cob
  • 2 ripe avocados
  • 2-3 tsp lemon juice
  • Red chilli, finely sliced (to taste)
  • Fresh basil leaves (to taste)

Pantry Items

  • 1 tbsp olive oil
  • Salt and pepper (to taste)

Dairy

  • Parmesan cheese, grated or in shavings (to taste)

Bakery

  • 4 slices bread of your choice

Instructions

  1. Boil the corn: Place the corn cobs in a large pot of salted boiling water and cook for 10 minutes until tender. Drain well and set aside.
  2. Grill the corn: Brush the boiled corn with olive oil, then grill on a griddle pan or outdoor grill until caramelized and golden on all sides. Remove and let cool slightly.
  3. Prepare the avocado: Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Add lemon juice, salt, and pepper, then smash with a fork to your preferred texture—smooth or chunky.
  4. Toast the bread: Toast the bread slices to your liking using a toaster or skillet.
  5. Assemble the toast: Spread the smashed avocado evenly over the toasted bread slices.
  6. Add grilled corn: Slice the grilled corn kernels off the cobs and scatter them generously over the avocado-topped toast.
  7. Finish with toppings: Top with finely sliced red chilies, fresh basil leaves, and grated or shaved Parmesan cheese. Season with additional salt and pepper if needed, then serve immediately.

Notes

  • You can substitute Parmesan with feta or goat cheese for a different flavor.
  • Use whole grain or sourdough bread for added texture and nutrition.
  • Grilling the corn adds a smoky sweetness; if unavailable, roasted corn can be used as an alternative.
  • Adjust chili amount according to your spice preference.
  • This recipe is best served fresh to enjoy the contrast of warm toasted bread and creamy avocado.
