These Grilled Steak Skewers feature juicy sirloin steak pieces marinated in a flavorful blend of avocado oil, red wine vinegar, Dijon mustard, Worcestershire sauce, and garlic, then grilled alongside vibrant bell peppers and red onions. Perfect for a tasty and easy-to-make outdoor meal, these skewers offer a balance of savory, tangy, and smoky flavors with tender steak and slightly charred vegetables.

Ingredients

Steak and Vegetables

  • 1 1/4 pounds sirloin steak, cut into 1 1/4-inch pieces
  • 2 bell peppers, cut into 1-inch pieces
  • 1 medium red onion, cut into 1-inch pieces
  • Flaky sea salt, for topping

Marinade

  • 1/4 cup avocado oil (or olive oil)
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 3 cloves garlic, pressed or finely minced
  • 1 teaspoon coarse freshly-ground black pepper
  • 1 teaspoon fine sea salt

Instructions

  1. Make the marinade: In a medium bowl, whisk together the avocado oil, red wine vinegar, Dijon mustard, Worcestershire sauce, garlic, black pepper, and fine sea salt until the mixture is well combined and emulsified.
  2. Marinate the steak: Place the sirloin steak pieces into a large zip-top bag or shallow bowl. Pour the marinade over the steak, ensuring each piece is coated evenly. Seal or cover and refrigerate for at least 30 minutes to allow the flavors to penetrate, or up to 6 hours for deeper flavor.
  3. Prep the skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread the marinated steak pieces alternately with bell pepper chunks and red onion pieces onto the skewers, creating a colorful and balanced arrangement.
  4. Grill: Preheat your grill to medium-high heat. Place the prepared skewers on the grill grate and cook for 8 to 10 minutes, turning every few minutes to cook the steak evenly and get nice char marks on all sides. The vegetables should also develop a slight char and soften. Cook until the steak reaches your desired doneness.
  5. Serve: Transfer the grilled skewers to a serving platter, sprinkle with flaky sea salt for an added burst of flavor, and let them rest for 5 minutes before serving to allow juices to redistribute.

Notes

  • Soak wooden skewers in water before using to prevent burning on the grill.
  • Marinating the steak for longer (up to 6 hours) intensifies flavor but 30 minutes is sufficient for a quick marinade.
  • Use avocado oil for a higher smoke point, or olive oil as a suitable substitute.
  • Adjust grilling time based on steak thickness and preferred doneness.
  • Serve with a side salad, rice, or grilled bread for a complete meal.
