Ingredients

Salad Ingredients

  • 5 cups broccoli florets
  • 1 cup red grapes, sliced
  • 1/2 cup red onion, chopped
  • 1/2 cup raisins
  • 1/3 cup sunflower seeds

Dressing Ingredients

  • 1/2 cup plain Greek yogurt
  • 3 tablespoons Dijon mustard
  • 3 tablespoons honey or maple syrup
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the dressing: In a small bowl or jar, whisk together the plain Greek yogurt, Dijon mustard, apple cider vinegar, honey, lemon juice, salt, and black pepper until the mixture is creamy and smooth. If you prefer a thinner dressing, add a small amount of olive oil or water and whisk to combine.
  2. Mix the salad: In a large bowl, combine the broccoli florets, sliced red grapes, chopped red onion, raisins, and sunflower seeds. Pour the prepared honey Dijon yogurt dressing over the salad ingredients and toss thoroughly until all components are well coated.
  3. Chill before serving: Cover the bowl with plastic wrap or a lid and refrigerate the salad for at least one hour, allowing the flavors to meld together. You can also chill it for up to 24 hours. Once chilled, taste and adjust salt and pepper if needed before serving.

Notes

  • For a vegan version, substitute Greek yogurt with a plant-based yogurt and use maple syrup instead of honey.
  • To add extra crunch, consider adding chopped nuts such as almonds or walnuts.
  • This salad is best served chilled and can be prepared a day ahead for more developed flavors.
  • Feel free to adjust the sweetness of the dressing by increasing or reducing the honey or maple syrup amount according to your taste.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
