Instructions

  1. Blend the sauce: Preheat the oven to 400°F (200°C). In a food processor, combine the soaked cashews, vegan mayonnaise, and water. Blend for 1 to 2 minutes until the mixture is smooth and creamy, forming the base of the dip.
  2. Mix the dip: Transfer the creamy cashew blend into a large mixing bowl. Add the thawed and drained spinach, chopped and drained artichoke hearts, finely chopped yellow onion, minced garlic cloves, kosher salt, and ground black pepper.
