A fresh and vibrant appetizer featuring juicy heirloom tomatoes, fragrant basil, and crispy grilled baguette slices topped with Parmesan cheese. This Heirloom Tomato Bruschetta is perfect for summer gatherings or a light snack, combining simple ingredients that pack bold flavors.

Ingredients

Tomato Mixture

  • 3 cups heirloom tomatoes, diced
  • 10 leaves fresh basil, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt, or to taste
  • 2 teaspoons olive oil

Bread and Toppings

  • 1 small baguette
  • 1/2 cup shredded Parmesan cheese (optional)
  • Olive oil for drizzling
  • Additional basil leaves for garnish

Instructions

  1. Prepare the Tomato Mixture: Dice the heirloom tomatoes and transfer them to a bowl. Add the minced garlic, salt, olive oil, and chopped basil. Stir gently to combine. Set aside for about 30 minutes to allow the flavors to meld and develop.
  2. Slice and Oil the Baguette: Slice the baguette into rounds approximately 1/2 inch thick. Drizzle both sides of each baguette slice lightly with olive oil to prepare for grilling.
  3. Grill the Bread: Using a cast iron skillet or an outdoor grill, heat the bread slices over medium-high heat until they become golden brown and crispy on both sides. This should take about 2-3 minutes per side. Keep a close watch to prevent burning.
  4. Assemble the Bruschetta: Just before serving, spoon the tomato mixture generously onto each grilled baguette slice. Sprinkle a pinch of shredded Parmesan cheese on top, if using. Garnish each bruschetta with a fresh basil leaf for an aromatic touch.
  5. Serve: Arrange the bruschetta on a serving platter and serve immediately to enjoy the contrast of the warm, crispy bread and the fresh, juicy tomato topping.

Notes

  • You can substitute Parmesan cheese with Pecorino Romano or omit it entirely for a dairy-free option.
  • If heirloom tomatoes are out of season, use ripe cherry tomatoes cut into smaller pieces.
  • For added flavor, rub the grilled bread lightly with a cut clove of garlic before adding the tomato mixture.
  • The tomato mixture can be refrigerated for up to 2 hours before assembling but is best served fresh.
