This Homemade Green Bean Casserole recipe uses fresh green beans and a creamy mushroom sauce cooked slowly in a slow cooker to create a comforting and flavorful classic side dish. Topped with crispy fried onions and a buttery panko crust, it’s the perfect addition to any holiday meal or family dinner.

Ingredients

Sauce

  • 8 ounces mushrooms, chopped or sliced
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 cup chicken broth
  • 1 cup whole milk
  • 2 teaspoons Worcestershire sauce
  • Salt and pepper to taste
  • 1 cup canned fried onions, crushed

Casserole

  • 1 lb fresh green beans, trimmed

Topping

  • 3 tablespoons butter
  • ½ cup panko breadcrumbs
  • 2 cups canned fried onions

Instructions

  1. Cook Mushrooms: Melt 3 tablespoons of butter over medium heat in a large skillet. Add the chopped or sliced mushrooms and cook until tender and the liquid has evaporated, about 6-8 minutes.
  2. Make Sauce: Sprinkle in the flour and whisk to combine with the mushrooms. Cook for 1 minute to remove the raw flour taste, then slowly pour in the chicken broth, whole milk, and Worcestershire sauce, whisking constantly until the mixture thickens, about 3-4 minutes. Season with salt and pepper to taste.
  3. Combine with Onions: Stir in 1 cup of crushed fried onions into the mushroom sauce mixture. Pour this mixture over the fresh green beans in the slow cooker and stir well to combine.
  4. Slow Cook: Cover and cook on low for 4-5 hours until the green beans are tender but still slightly firm. Alternatively, cook on high for 2-3 hours.
  5. Prepare Topping: Just before serving, melt 3 tablespoons of butter in a skillet over medium-high heat. Add the panko breadcrumbs and 2 cups of fried onions. Cook, stirring frequently, until the mixture turns golden brown and crispy, about 2-3 minutes.
  6. Serve: Sprinkle the crispy panko and fried onion topping evenly over the slow cooker green bean casserole and serve immediately for the best texture.

Notes

  • Use fresh green beans trimmed and cut into bite-sized pieces for best texture and flavor.
  • For a vegetarian version, substitute vegetable broth and use a Worcestershire sauce without anchovies.
  • Be careful not to overcook the green beans in the slow cooker to avoid mushiness.
  • The crispy topping adds important texture contrast; don’t skip it.
  • This casserole can be prepared a few hours in advance and reheated gently in the slow cooker before serving.
