Ingredients

For the Coconut Mint Filling

  • 2 cups sweetened, shredded coconut
  • 3 tablespoons chopped fresh mint
  • 1 tablespoon + 1 teaspoon melted coconut oil

For the Chocolate Coating

  • 12 ounces dairy-free, gluten-free dark chocolate chips

Instructions

  1. Prepare the Coconut Mint Filling: Add the shredded coconut, chopped mint, and melted coconut oil to a food processor. Blend the mixture for about two minutes until fully combined and slightly sticky.
  2. Melt the Chocolate: Melt the dark chocolate chips either in the microwave in short bursts or using a double boiler until smooth and glossy.
  3. Form the Base Layer: Arrange 12 cupcake liners in a muffin tin. Spoon about 1½ teaspoons of melted chocolate into the bottom of each wrapper to create a base layer.
  4. Add the Coconut Mixture: Place a heaping teaspoon of the prepared coconut mint mixture on top of the chocolate base in each wrapper. Refrigerate the cupcake tin for 10 minutes so the chocolate can slightly harden.
  5. Press the Filling: Remove the tin from the refrigerator and gently press down the chilled coconut mixture with your fingers to compact it.
  6. Encase the Filling in Chocolate: Re-melt the remaining chocolate if needed. Spoon enough melted chocolate over the coconut filling to completely cover it. Using the spoon, push the chocolate around the edges to ensure the filling is almost entirely encased.
  7. Set the Patties: Refrigerate the cups for at least 30 minutes until the chocolate is fully hardened and set.
