Ingredients

Chicken

Glaze

  • 2 tablespoons adobo sauce from a can of chipotle peppers
  • 1-2 chipotle peppers in adobo, finely chopped (adjust for heat)
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt

Grill Preparation

Instructions

  1. Make the glaze: In a small bowl, thoroughly combine the honey, adobo sauce, finely chopped chipotle peppers, lime juice, garlic powder, smoked paprika, and salt to create a sweet and smoky glaze.
  2. Prep the chicken: Pat the chicken pieces dry with paper towels to help the glaze adhere better. Reserve about ¼ of the glaze for basting later, then coat the remaining glaze evenly over the chicken. Allow the chicken to marinate for at least 30 minutes or up to 4 hours in the refrigerator for deeper flavor.
  3. Grill the chicken: Preheat your grill to medium-high heat. Brush the grill grates with olive oil to prevent sticking. Place the chicken on the grill and cook for 6 to 7 minutes per side until the internal temperature reaches 165°F and the chicken has developed beautiful char marks.
  4. Glaze and serve: During the last 2 minutes of grilling, brush the chicken with the reserved glaze to add extra flavor and shine. After removing from the grill, let the chicken rest for a few minutes to retain its juices before serving.
