Ingredients

Chicken and Marinade

  • 1 ½ pound chicken breast, cut into 1 inch pieces

Vegetables

  • 1 medium red bell pepper, sliced thin
  • 1 cup sugar snap peas (or snow peas, about 8 ounces)
  • ½ cup shredded carrots
  • 1 tablespoon minced garlic

Sauce and Noodles

  • 3 cups low sodium chicken broth
  • 1 tablespoon sriracha (or ketchup as alternative)
  • ⅓ cup low sodium soy sauce
  • ½ cup honey
  • 8 ounces spaghetti noodles
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Marinate the Chicken: Place the cubed chicken in a bowl. Add the brown sugar and hoisin sauce to the chicken and stir thoroughly to coat each piece evenly, ensuring the flavors infuse the meat.
  2. Cook the Chicken: Heat a large deep skillet over medium-high heat. Add the neutral cooking oil and let it warm up. Add the marinated chicken to the pan and cook for 7-8 minutes, stirring frequently until the chicken is fully cooked through. Remove the chicken from the pan, cover to keep warm, and set aside.
  3. Sauté the Vegetables: In the same skillet over medium-high heat, add the sliced red bell pepper, sugar snap peas, shredded carrots, and minced garlic. Cook for about 2 minutes, stirring often until the vegetables are fragrant and slightly tender but still crisp.
  4. Combine Sauce and Noodles: Pour in the chicken broth, sriracha, low sodium soy sauce, and honey. Stir well to combine. Break the spaghetti noodles in half and add them to the pan, pushing them down so they are mostly submerged in the liquid. Increase the heat until the mixture boils, then cover the skillet and reduce to a simmer. Cook for 9-10 minutes or until the noodles are tender and have absorbed most of the liquid.
  5. Thicken the Sauce: In a small bowl, mix the cornstarch and water until smooth to create a slurry. Turn the heat back to medium-high and add the slurry to the pan. Allow the liquid to bubble uncovered for about 2 minutes, stirring occasionally, to thicken the sauce.
  6. Combine and Serve: Return the cooked chicken to the skillet and toss everything together to combine well with the noodles and sauce. The sauce will continue thickening as it cools.
