Ingredients

For the Base

  • 2 tablespoons avocado oil or olive oil
  • 2 (6-inch) tortillas
  • 1 cup refried beans (warmed)

Eggs and Toppings

  • 2 large eggs
  • ¼ cup ranchero sauce
  • 2 tablespoons roughly chopped cilantro
  • 2 tablespoons crumbled cotija cheese
  • ½ avocado, sliced
  • Kosher salt, to taste
  • Ground black pepper, to taste

Instructions

  1. Crisp the tortilla. Heat the avocado or olive oil in a small to medium skillet over medium heat. Place one tortilla in the pan and cook for about 30 seconds on each side until it turns slightly crispy. Use tongs to carefully remove the tortilla and set it on a paper towel to drain any excess oil. Repeat this process with the second tortilla.
  2. Fry the eggs. Using the same skillet, crack the eggs into the pan. Cook them until the whites are set and the yolks reach your preferred level of doneness, whether runny or fully cooked.
  3. Layer the huevos rancheros. Arrange the crispy tortillas on a serving plate. Spread a generous layer of warmed refried beans onto each tortilla, then top each with a freshly fried egg. Drizzle the ranchero sauce evenly over the eggs.
  4. Garnish and serve. Season the eggs with kosher salt and ground black pepper to taste. Sprinkle chopped cilantro and crumbled cotija cheese on top, and add slices of avocado for a creamy contrast. Serve immediately while warm.
