This Instant Pot Garlic Ginger Rice is a flavorful and aromatic side dish made with jasmine rice, fresh ginger, and garlic. Using the Instant Pot allows for a quick and easy cooking process that delivers perfectly cooked, fluffy rice infused with savory notes of garlic and ginger, making it an excellent accompaniment to a variety of meals.

Ingredients

Rice Mixture

  • 3 Tablespoons avocado oil
  • 1 Tablespoon freshly grated ginger (or 3 cubes frozen)
  • 1 Tablespoon freshly grated or minced garlic
  • 3 cups jasmine rice or long grain white rice
  • 1 ½ teaspoons sea salt
  • 3 cups water

Instructions

  1. Saute Aromatics: Turn on the Instant Pot to the Saute setting and add the avocado oil. Once hot, add the garlic, grated ginger, sea salt, and rice. Cook, stirring occasionally, for about 5 minutes until the rice is well coated and the garlic and ginger are fragrant.
  2. Add Water and Seal: Pour in 3 cups of water and stir to combine all ingredients evenly. Close the Instant Pot lid and ensure the steam release valve is set to the “sealing” position.
  3. Pressure Cook: Set the Instant Pot to cook on high pressure for 6 minutes. The pot will build pressure and begin cooking automatically.
  4. Natural Release: Allow the Instant Pot to naturally release pressure for 5 minutes after cooking time ends. This helps finish the cooking process gently.
  5. Quick Release and Fluff: After the natural release, carefully turn the valve to “venting” for a quick steam release. Open the lid and fluff the rice gently with a fork to separate the grains.
  6. Keep Warm and Serve: Cover the Instant Pot or rice pot with the lid or a clean tea towel to keep warm until serving. Enjoy as a delicious side dish or base for your favorite meals.

Notes

  • You can substitute avocado oil with other neutral oils like vegetable or canola oil if preferred.
  • Using frozen ginger cubes is a convenient alternative if fresh ginger is unavailable.
  • For extra flavor, consider adding a cinnamon stick or star anise during sautéing.
  • If you prefer your rice less salty, adjust the salt quantity accordingly.
  • Fluffing the rice after cooking prevents clumping and keeps it light and airy.
