This Instant Pot Ground Turkey Sloppy Joes recipe is a quick, flavorful, and healthier twist on the classic comfort food favorite. Ground turkey is cooked with spices and vegetables, then simmered in a tangy homemade sauce, all prepared conveniently in the Instant Pot. Perfect for a weeknight dinner, this recipe yields juicy, tender sloppy joes served best on fresh buns.

Ingredients

Meat and Aromatics

  • 1 tablespoon avocado oil or olive oil
  • 1 tablespoon minced garlic
  • 1-pound ground turkey
  • 1 green bell pepper, finely diced
  • 1/2 white onion, finely diced

Spices and Seasonings

  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Sauce

  • 2/3 cup ketchup (for a sugar free option try the Primal Kitchen Ketchup)
  • 1/4 cup beef broth (or water)
  • 1 tablespoon coconut aminos (or Worcestershire sauce)
  • 1 and 1/2 tablespoons tomato paste
  • 2 teaspoons Dijon mustard

Instructions

  1. Heat oil and garlic: Set the Instant Pot to sauté mode and heat the avocado or olive oil. Once hot, add the minced garlic and sauté until fragrant, about 1 minute.
  2. Cook ground turkey: Add the ground turkey along with salt, pepper, and chili powder to the Instant Pot. Stir to break up the meat and cook until it is about halfway browned and no longer pink, roughly 4-5 minutes.
  3. Add vegetables: Stir in the diced onion and green bell pepper. Let them soften for about 2 minutes while you prepare the sauce.
  4. Prepare sauce: In a small bowl, combine ketchup, beef broth (or water), coconut aminos (or Worcestershire sauce), tomato paste, and Dijon mustard. Stir well, no need for complete dissolution.
  5. Pressure cook: Pour the sauce mixture into the Instant Pot with the ground turkey and vegetables, stir to combine, then close the lid. Set the Instant Pot to manual high pressure for 6 minutes. Once done, perform a quick release and carefully remove the lid.
  6. Simmer to thicken: If the sauce is not thickened enough, use the sauté function again and let it simmer while stirring occasionally until the excess liquid evaporates to your desired consistency.
  7. Serve: Spoon the sloppy joe mixture onto fresh buns, such as brioche or white buns, and serve immediately.

Notes

  • For a sugar-free sauce, use a ketchup like Primal Kitchen that contains no added sugars.
  • You can substitute beef broth with water if preferred.
  • Adjust chili powder and seasonings to taste if you prefer a spicier or milder flavor.
  • The recipe works well with other ground meats like chicken or beef if desired.
  • Leftovers keep well in the refrigerator for up to 3 days.
