Ingredients

Dry Ingredients

  • 1½ cups all purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • ½ cup granulated sugar
  • 1 cup quick cooking oats

Wet Ingredients

  • ½ cup unsalted butter, chilled
  • heaping ⅓ cup vanilla yogurt (see Note 1)
  • ¾ cup fruit jam

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and position a rack in the center. Line a large baking sheet with parchment paper to prevent sticking.
  2. Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, sea salt, and granulated sugar until evenly mixed.
  3. Cut in Butter: Using a fork or pastry cutter, cut the chilled unsalted butter into the dry ingredients until the mixture resembles small pebbles with pea-sized pieces of butter evenly distributed.
  4. Add Yogurt and Oats: Stir the vanilla yogurt into the butter-flour mixture until combined. Then fold in the quick cooking oats until they are well incorporated throughout the dough.
  5. Shape Scones: Divide the dough evenly into 12 portions. Roll each portion into a ball and gently flatten into thick disks. Arrange the scones spaced evenly on the prepared baking sheet.
  6. Bake Scones: Bake the scones on the center rack for 12 minutes until they are lightly golden and cooked through.
  7. Make Wells: Immediately after removing the scones from the oven, use the end of a wooden spoon to gently press a small well into the center of each scone, creating a perfect indent for the jam.
  8. Cool and Fill: Transfer the scones to a serving plate and let them cool for about 5 minutes until warm but not hot. Fill each well with 1 tablespoon of your favorite fruit jam.
