Ingredients

Jerk Marinade

  • 1 bunch green onions, some of the green part included, chopped (about ¾ cup)
  • 2 medium garlic cloves, chopped
  • 1 medium jalapeño, chopped (seeds and ribs removed for less heat, if desired)
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon packed light brown sugar
  • 1½ teaspoons ground allspice
  • 1 teaspoon dried thyme
  • ½ teaspoon ground cinnamon
  • 1 teaspoon Kosher salt
  • 2 tablespoons water

Chicken

  • 8 medium chicken drumsticks, skinned and trimmed of excess fat

Instructions

  1. Make the marinade: In a blender, combine green onions, garlic, jalapeño, lime juice, olive oil, brown sugar, allspice, thyme, cinnamon, salt, and water. Blend until the mixture is smooth. Set aside ¼ cup of this marinade for drizzling after baking.
  2. Marinate the chicken: Place the chicken drumsticks in a large zip-top bag and pour the remaining marinade over them. Seal the bag and massage it gently to coat all the chicken pieces evenly. Refrigerate for at least 2 hours, preferably overnight, turning the bag occasionally to ensure even marination.
