This vibrant Kale Guacamole combines creamy ripe avocados with nutrient-rich kale, bright lime juice, and a touch of spicy jalapeño, offering a fresh twist on classic guacamole. Ingredients

Kale:

  • 3 to 4 big leaves of curly green kale (Tuscan/lacinato variety also works well)

Main Ingredients:

  • 4 medium ripe avocados, halved and pitted
  • 3 to 4 tablespoons lime juice (about 1 ½ medium limes), divided, to taste
  • ¾ teaspoon kosher salt, to taste
  • ⅓ cup roughly chopped red onion
  • ¼ cup roughly chopped fresh cilantro, lightly packed
  • 1 small jalapeño, seeds and membranes removed, roughly chopped

Instructions

  1. Prepare the Kale: Remove the tough ribs from the kale leaves using a chef’s knife and discard them. Chop the kale into small, bite-sized pieces, then lightly sprinkle with salt and squeeze about 1 teaspoon of lime juice over it. Massage the kale by scrunching it in your hands repeatedly until it becomes a darker green and fragrant, which softens it and reduces bitterness. Measure out 1 cup packed kale and set aside.
  2. Blend Avocados: Scoop the flesh of the avocados into the bowl of a food processor, discarding any bruised or brown areas. Add 3 tablespoons of lime juice and ¾ teaspoon of kosher salt. Blend until fairly smooth, stopping occasionally to scrape down the sides of the bowl for even mixing.
  3. Add Remaining Ingredients: Add the massaged kale, chopped red onion, cilantro, and jalapeño to the food processor. Blend until mostly smooth with tiny bits of kale and onion for texture or completely smooth if preferred.
  4. Adjust Seasoning and Serve: Taste the guacamole and add more salt or lime juice if necessary, usually up to an additional ½ teaspoon of salt and 1 tablespoon of lime juice. Blend again to incorporate. Serve immediately for best flavor and freshness.

  • You can substitute Tuscan or lacinato kale if curly kale is not available.
