Ingredients

Instructions

  1. Blend Ingredients: Combine the lemon zest, lemon juice, coconut milk, optional water, sweetener, salt, and turmeric in a blender. Blend until the mixture is smooth and well combined. Add chia seeds and pulse once or twice just to distribute them evenly throughout the mixture.
  2. Adjust Flavor: Taste the mixture and adjust the sweetness or tanginess as desired. If you prefer it more lemony or sweeter, add extra lemon juice, zest, or sweetener and blend again to mix thoroughly.
  3. Chill to Set: Pour the blended mixture into serving glasses or containers. Refrigerate overnight to allow the chia seeds to absorb the liquid and create a thick pudding texture. Stir once after about an hour if needed to prevent clumping and distribute the chia evenly.
