Ingredients

Shrimp and Marinade

  • 1 pound large shrimp (peeled and deveined, tails on or off)
  • 3 tablespoons unsalted butter (melted)
  • 3 cloves garlic (finely minced)

  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 tablespoon lemon juice
  • Zest of 1/2 lemon
  • 1 tablespoon finely-chopped fresh parsley
  • Lemon wedges (for serving)

Instructions

  1. Prep the grill and skewers. Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for at least 20 minutes to prevent burning during grilling.
  2. Make the lemon garlic butter. In a small bowl, whisk together the melted butter, minced garlic, smoked paprika, sea salt, black pepper, lemon juice, and lemon zest until well combined to create a flavorful marinade.
  3. Season the shrimp. Place the peeled and deveined shrimp in a bowl and pour about two-thirds of the lemon garlic butter over them. Toss gently to ensure each shrimp is evenly coated with the marinade.
  4. Skewer the shrimp. Thread the shrimp onto the soaked skewers by piercing near the tail and head, making sure they lay flat and fit securely for even cooking.
  5. Grill. Place the shrimp skewers on the preheated grill. Cook for 2 to 3 minutes on each side, or until the shrimp turn pink, are opaque, and have a light char from the grill.
  6. Finish. Transfer the cooked shrimp to a serving platter and drizzle with the remaining third of the lemon garlic butter to enhance flavor and juiciness.
  7. Serve. Sprinkle freshly chopped parsley over the shrimp, add a squeeze of lemon for extra brightness, and serve warm with lemon wedges on the side.
