Instructions

  1. Cook the Couscous: Follow the instructions on the pearl couscous packaging, typically by bringing 1½ cups water to a boil and boiling 1 cup turmeric pearl couscous for 8-15 minutes. Add 2 tbsp. olive oil during cooking. Once cooked, transfer the couscous to a sealed container and refrigerate for at least 30 minutes to cool.
  2. Prepare Vegetables and Herbs: While the couscous cools, finely chop 1 tbsp. fresh dill and 1 tbsp. fresh parsley. Dice ½ cucumber and ½ small red onion. Place all chopped vegetables and herbs into a large mixing bowl.
  3. Combine Ingredients: When the couscous is cool, gently break up any clumps with a spoon inside the container.
