Instructions

  1. Proof the yeast: In a medium bowl, combine the active dry yeast with warm water. Stir gently and let it sit for 5 minutes until the mixture thickens but does not become foamy.
  2. Add buttermilk: Pour the cold buttermilk into the yeast mixture and whisk until fully combined. Set aside.
  3. Mix dry ingredients: In a food processor or a large bowl, combine the flour, sugar, salt, baking powder, and baking soda. Pulse or whisk together until evenly mixed.
  4. Add butter: Add the very cold butter chunks to the dry ingredients. Pulse in the food processor until incorporated, leaving pea-sized chunks, or use a pastry cutter to blend the butter into the flour mixture similarly.
  5. Combine wet and dry: Pour the buttermilk and yeast mixture into the dry ingredients. Pulse just until the dough barely comes together, or use a spatula to fold it gently until combined.
  6. Form and fold dough: Turn the dough out onto a floured surface and work it into a shaggy dough. Shape the dough into a rectangle and cut it into thirds. Stack the pieces on each other, then roll back into a rectangle. Repeat this folding and rolling three times. Finally, roll the dough to about 1-inch thickness.
