Ingredients

  • ¾ teaspoon salt
  • Freshly ground black pepper, to taste

  • ⅓ cup fresh or frozen blueberries
  • 1 teaspoon coconut oil or olive oil (for cooking)

Instructions

  1. Mix the ingredients: In a large bowl, combine the ground turkey, minced garlic, maple syrup, chopped sage, dried thyme, ground cumin, ground ginger, allspice, cayenne pepper, salt, and freshly ground black pepper. Use your hands to mix everything thoroughly until well combined.
  2. Add blueberries: Gently fold in the fresh or frozen blueberries, being careful not to crush them. Ensure they are evenly distributed throughout the mixture.
  3. Form patties: Shape the mixture into 8 even-sized patties, approximately 1/3 inch thick. Make sure to tuck the blueberries into the meat so they don’t pop out during cooking.
  4. Heat the pan: Add 1 teaspoon of coconut oil or olive oil to a nonstick skillet and place it over medium heat.
  5. Cook patties: Place the turkey sausage patties in the skillet and cook for about 5 minutes on one side. Flip the patties and cook for another 4 to 5 minutes or until the internal temperature reaches 165°F (74°C) and the patties are fully cooked.
  6. Serve: Serve warm, pairing two patties with 2 fried eggs for a complete breakfast. Optionally, drizzle a small amount of maple syrup over the patties to enhance their natural sweetness.
