Instructions

  1. Prepare the Lava Center: Begin by melting the 2 tablespoons of vegan white chocolate chips until smooth. Stir in ½ teaspoon matcha powder and ½ teaspoon olive oil to create a smooth, glossy mixture. Transfer this mix into a small cupcake liner or mold and freeze until solid, forming the lava center.
  2. Make the Cake Batter: In a bowl, combine the all-purpose flour, 1 teaspoon matcha powder, baking powder, sugar, and a pinch of salt. Stir in 1 tablespoon olive oil, dairy-free milk, and vanilla extract until a smooth batter forms.
  3. Prepare the Ramekin: Generously grease a small ramekin with olive oil to prevent sticking. For extra insurance, dust the greased ramekin with powdered sugar, covering the sides and bottom thoroughly.
  4. Assemble the Cake: Pour half of the matcha cake batter into the greased ramekin. Place the frozen matcha white chocolate lava center in the middle of the batter, then carefully spoon the remaining batter over it, fully enclosing the lava.
  5. Bake the Lava Cake: Preheat the oven to 350°F (175°C). Bake the assembled cake for 20 minutes until the edges are set but the center remains soft.
