Ingredients

Rice and Oil

  • 2 tbsp avocado oil
  • 2 cups white long grain rice

Seasonings and Broth

  • 3 tablespoons tomato paste
  • 1½ teaspoons salt
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 4 cups chicken broth

Instructions

  1. Rinse the Rice: Rinse the rice in a fine mesh sieve under cold water until the water runs clear to remove excess starch, which helps prevent the rice from becoming gummy.
  2. Heat the Oil: Heat the avocado oil in a large skillet over medium-high heat until hot but not smoking, preparing the pan for toasting the rice.
  3. Toast the Rice: Add the rinsed rice to the skillet and stir to coat it fully with the oil. Cook the rice while stirring frequently for about 7-10 minutes. The rice will first appear very white as it cooks, then begin to toast and turn slightly golden along the edges, which adds a nutty flavor and texture.
  4. Add Tomato Paste and Seasonings: Stir in the tomato paste evenly to coat the rice. Then add salt, onion powder, garlic powder, and dried oregano, mixing well to combine all the flavors.
  5. Add Broth and Simmer: Pour in the chicken broth and bring the mixture to a simmer. Once simmering, cover the skillet with a lid and reduce the heat to low. Let the rice cook undisturbed for 25 minutes to allow it to absorb all the liquid.
  6. Remove from Heat but Keep Covered: After 25 minutes, remove the skillet from the heat but keep the lid on to continue steaming the rice with residual heat.
  7. Rest and Fluff: Let the rice sit covered for 10 minutes off the heat. After resting, lift the lid gently and fluff the rice with a fork to separate the grains. Serve warm and enjoy this classic Mexican Rice side dish.
