Mini Apple Pie Bites are bite-sized treats made with buttery phyllo shells filled with a spiced bourbon-apple filling. They’re crisp, warm, and perfectly portioned for parties or holidays.

Ingredients

1 TBS Unsalted Butter

3 Whole Honeycrisp Apples peeled, cored and small diced

1 tsp Ground Cinnamon plus more for garnish

1/8 tsp Kosher Salt

1/8 tsp Ground Nutmeg

¼ Cup Dark Brown Sugar packed

1/3 Cup Bourbon

1 tsp Lemon Juice

3 TBS Cornstarch

1/3 Cup Water

2 Boxes Mini Phyllo Shells (30 shells)

Optional: Whipped Cream to taste

Optional: Salted Caramel Sauce to taste

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add diced apples, cinnamon, salt, nutmeg, and brown sugar. Cook until apples begin to soften.
  3. Pour in bourbon and simmer 2–3 minutes to cook off alcohol.
  4. Stir in lemon juice.
  5. In a small bowl, whisk cornstarch and water together. Stir into apple mixture until thickened and glossy.
  6. Remove filling from heat and let cool slightly.
  7. Spoon apple mixture into mini phyllo shells, filling each generously.
  8. Bake filled shells at 350°F (175°C) for 8–10 minutes until warmed and crisp.
  9. Garnish with whipped cream, salted caramel, and a sprinkle of cinnamon before serving.

Notes

Use Granny Smith apples for a more tart filling.

Swap bourbon with apple cider for a kid-friendly version.

Add chopped nuts for extra crunch.

Cool filling before spooning into shells to prevent sogginess.

Store leftovers in the fridge up to 2 days and reheat in the oven.
