  • 1 tablespoon coconut sugar or brown sugar

Instructions

  1. Combine ingredients. Preheat the oven to 350°F (175°C). In a large mixing bowl, add the ground beef, diced onion, minced garlic, egg, ketchup, Worcestershire sauce, quick-cooking oats, milk, chopped parsley, Italian seasoning, kosher salt, and ground black pepper. Mix all the ingredients thoroughly with your hands until well combined, being careful not to overwork the meat to keep the texture tender.
  2. Divide the mixture. Take a small handful of the meat mixture and gently roll it between your hands to form slightly rounded meatballs. Place each meatball into a muffin cup in a muffin pan. Repeat this process until the mixture is evenly spread among all 12 cups, shaping the meatloaf muffins so their edges remain slightly rounded to help retain grease on the outside edges during cooking.
  3. Coat with the glaze. In a small bowl, combine ketchup, Worcestershire sauce, and coconut or brown sugar to create the glaze. Spoon the glaze evenly over the top of each meatloaf muffin. Optionally, you can wait to glaze until after baking if preferred.
  4. Cook. Place the muffin pan in the preheated oven and bake the meatloaf muffins for 25 to 30 minutes. Use a meat thermometer to ensure the internal temperature reaches 160°F (70°C), confirming they are fully cooked and safe to eat.
