This refreshing Mint Chocolate Chip Ice Cream Pie features a crunchy Oreo cookie crust filled with creamy mint chocolate chip ice cream, topped with hot fudge, whipped cream, and extra Oreo bits for a crunchy finish. Perfect for a cool dessert on warm days or any chocolate and mint lover’s delight.

Ingredients

Crust

  • 25 Oreo Cookies
  • 6 tablespoons Unsalted Butter, melted

Filling & Toppings

  • 1 quart Mint Chocolate Chip Ice Cream
  • 4 ounces Hot Fudge Sauce
  • 8 ounces Whipped Cream (Cool Whip or homemade)
  • 3 Oreo Cookies, chopped for garnish

Instructions

  1. Prepare the crust: Add 25 Oreos into a blender or food processor and blend until you have fine crumbs throughout.
  2. Mix crust ingredients: In a medium bowl, combine the Oreo crumbs with the melted butter until you get a pasty, combined mixture.
  3. Form the crust: Press the cookie crumb mixture evenly into the bottom and up the sides of a greased 9-inch pie pan to create the crust. Make sure it is packed firmly for clean slices later.
  4. Freeze the crust: Place the crust in the freezer for 20 to 30 minutes until it is firm and set.
  5. Soften the ice cream: Let the mint chocolate chip ice cream soften at room temperature for about 20 minutes to make spreading easier.
  6. Fill the pie: Scoop and spread the softened ice cream evenly into the prepared crust and across the top. Press lightly to smooth the surface.
  7. Freeze to set the filling: Transfer the pie back to the freezer and let it harden for at least 4 hours, allowing the ice cream to firm up.
  8. Add hot fudge topping: Remove the pie from the freezer and drizzle the top with 4 ounces of hot fudge sauce for a rich chocolate layer.
  9. Garnish with Oreos: Chop the remaining 3 Oreo cookies and sprinkle them over the fudge-topped pie for added texture and decoration.
  10. Add whipped cream: Pipe or spread the whipped cream around the edges of the pie to finish the presentation.
  11. Serve and enjoy: Slice the pie into 8 pieces and serve immediately for a deliciously cool treat.

Notes

  • Use full-fat ice cream for the creamiest texture.
  • Press the crust firmly and evenly to prevent crumbling when slicing.
  • Allow ice cream to soften slightly for easier spreading but do not let it melt completely.
  • For homemade whipped cream, whip heavy cream with a little sugar until stiff peaks form.
  • This pie is best enjoyed within 24 hours of assembly for optimal texture and flavor.
  • Store leftover pie covered in the freezer to avoid ice crystals.
